  I'll say only this: taste it to believe it. The moment you open the bottle you can tell it is not just any oil. The aroma is beautifully intense, very green, and it immediately reminded me of fresh-cut grass. At the first taste it is decisive, even more so than the oils I am used to: you get the bitterness, and then that peppery note that catches in the throat, but in a pleasant way. I tried it on a simple bruschetta and it really made the difference. It gives the dish character without covering everything else. A fine discovery.

  I have tasted many extra virgin oils, but Carpe Diem really is on another level. An intense aroma of fresh olive, with very elegant herbaceous notes. On the palate it is balanced: fruity, with a light peppery finish that signals great quality. I tried it on warm bread and on a simple salad and it completely transformed the dish. You can tell at once that it is a craft product of the highest quality. I will certainly buy it again.
